Chicken, Sun-Dried Tomato, and Artichoke Bake
Nothing could be simpler than this savory chicken dish, and it goes together in a snap, too. Chicken breasts bake in a creamy mascarpone and herb sauce with the flavor of sun-dried tomatoes, artichokes, and Parmesan cheese. Serve this with orzo or another pasta for your next dinner party.

Sweet Noodle Kugel with Apples and Almonds
For convenience, you can assemble the kugel the day before and refrigerate it until needed. For best results, return it to room temperature before baking. Served with a salad, this makes a good lunch or brunch entrée.

Creamy Tomato-Basil Soup
One day, my sister Meg was out shopping at the mall for Lego toys with her son Stefan and he wanted to go to lunch. They went to the Nordstrom Cafe, where she ordered tomato-basil soup and Stefan ordered macaroni and cheese. While waiting for his order, he wanted a taste of Meg’s soup and, to her amazement, he loved it. They ended up splitting the bowl. Now every time they do their Lego shopping, Stefan requests the tomato-basil soup! Meg adapted this version from one of Nordstrom’s cookbooks. It calls for two types of basil, dried and fresh. Our version is perfect paired with a tuna or grilled cheese sandwich, or alongside a burger.
