Monday, January 25, 2010Mardi Gras is less than a month away… so until February 10, the official start date of the celebration, HCP Dishes will post some recipes here to get you in the appropriately celebratory spirit. The first is a cocktail called Cajun Comfort, from Fred Thompson’s new book Bourbon.
Cajun Comfort will give you a little taste of the French Quarter this coming Fat Tuesday. Bourbon author Fred Thompson knows that Cajuns like things spicy, so heat up this drink with a little Tabasco hot sauce (which is made in Lousiana, of course), or even habanero sauce if you’re feeling bold.
Cajun Comfort
Serves 1
Ice cubes
1 1/2 ounces bourbon
1 ounce Southern Comfort
2 tablespoons honey
4 or 5 dashes hot sauce
1. Fill a cocktail shaker halfway full with ice cubes. Add the bourbon, Southern Comfort, honey, and hot sauce. Shake slowly, allowing the honey to incorporate, until
the shaker is frosted.

The toddy family traces its heritage back as far as the heated pools of the river Okeanos (which, in ancient Greek mythos, was the river that circled the earth), where drink-loving ancestors reclined to unwind and gaze at sun, stars, and moon (which rose and set out of the river’s waters), sipping heated H2O swirled into mugs made of wood and mixed with our old pal brandy’s progenitors and a smidge of sweetness (perhaps some honey, perhaps a little sugarcane, perhaps a sweet dried fig), taking a few moments to bandy, philosophically, about whether a lemon twist should be added to the mug’s contents.

Four Course Cocktail Dinner and Book Signing with Author Fred Thompson
On January 14th at 6:30pm, Author Fred Thompson will be at Bourbon House for a signing of his new title: Bourbon. The event will feature a four course dinner paired with cocktails from the book as well as a Hors d’oeuvres reception. Fred Thompson is a writer and food stylist who divides his time between Raleigh, North Carolina, and New York City. A Culinary Institute of America trained chef, Thompson has authored several cookbooks, including Iced Tea, Lemonade, Crazy for Crab, Barbecue Nation, and Hot Chocolate. He has been featured on NPR, and his work has appeared in Family Circle, Wine & Spirits, Fine Cooking, and Every Day with Rachael Ray.
