Today’s theme is meatloaf. And we are more than pleased to see two of our authors, Beth Hensperger and Robin Robertson, with two very different takes on this classic comfort food.
Beth’s comes from Not Your Mother’s Slow Cooker Recipes for Entertaining. This recipe for Tuscan Meatloaf is studded with fennel seeds and topped with butter-tossed roasted red potatoes.
Robin’s featured recipe is in her book Fresh from the Vegetarian Slow Cooker. Vegetarian Country-Style Pate is a nourishing and slow-cooked combination of eggplant, lentils, walnuts and tofu that only gets more flavorful when served cold the next day.
