As a kid, I was a pretty picky eater. Chicken? No thanks. Seafood? Yuck! Mom, are you really giving me carrots in my lunchbox?
However, one thing my mom could always depend on when I was being particularly difficult was good ol’ macaroni and cheese. I lived for the perfect cheese-to-pasta ratio and was always first to the table when this meal was served. Eventually, I even caught on to the fact my mom would make it just to stop my whining ahead of time.

Recipe: Macaroni, Cheese, and Tomato Soufflé
- 1 1/2 cups elbow macaroni
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
- 2 cups milk
- 1 small onion, finely chopped
